How to run it

  1. 1Run it before service, with the whole back-of-house team, including dish and prep.
  2. 2Go through burns, cuts and slips. Point to the real fryer, slicer and floor drains as you go.
  3. 3Run the three-question check, then read each answer from the notes.
  4. 4Practise the kitchen calls out loud once. It feels silly for ten seconds and saves skin all year.

Questions people ask

What are the main kitchen safety rules?
Use dry towels for hot pans, turn handles in, keep knives sharp and never catch a falling one, unplug slicers to clean them, clean spills right away and call out 'behind', 'hot' and 'sharp'.
How do you put out a grease fire in a pan?
Cover it with a lid or sheet pan and turn off the heat. Never use water. For a fryer, use the Class K extinguisher or the hood suppression system.
What should a kitchen staff meeting cover?
Safety and food safety reminders, menu changes, 86'd items, and anything that went wrong last service. A short safety topic each week keeps habits fresh.
