How to run it

  1. 1Check the temperatures against your local food code before you present. The deck uses the US FDA Food Code; UK figures are in the notes.
  2. 2Run it before service with the whole team, kitchen and floor together. Allergen mistakes usually happen between the two.
  3. 3Let everyone vote on each check before you give the answer from the notes, then ask one person to explain why.
  4. 4Ask people to join with their full name so the summary doubles as your training record.
  5. 5Finish with the confidence scale. Anyone below 4 gets a one-to-one walk-through of the allergen process this week.

What should food safety training cover?
Personal hygiene and handwashing, reporting illness, the temperature danger zone, cooking and cooling, cross-contamination, cleaning and sanitizing, and allergens.
What is the temperature danger zone?
Under the FDA Food Code, 41°F to 135°F, where bacteria grow fastest. UK guidance is to keep cold food at 8°C or below and hot food at 63°C or above.
What does allergen training for servers include?
The major allergens, how to take and pass on an allergy order, cross-contact risks such as shared fryer oil, and when to say you can't guarantee a dish.
How often should food handlers be trained?
It depends on your state or country, and many food handler cards last two to three years. A short refresher when the menu changes or each quarter keeps habits sharp.
